The heat comes from a handful of tiny chilies speckled throughout the tin. If you are looking for a good introduction to the sardine, these would be a solid pick. I’ve seen them at a number of grocery stores in the bay, and while the price is a step up from the the cheapest tins, it’s a great value at well under $10. With these, you don’t want to waste any the delectable oil. The good news is, you can have a pantry friendly pasta ready in well under 30 minutes. Toast breadcrumbs directly in the spicy oil, then use the rest of the oil (plus a little extra) to sauté garlic, a handful of rogue almonds or pine nuts, and capers. Add lemon zest, juice, and pasta water, then add your pasta when it’s about a minute shy of al dente. Finish with lots of parsley and the sardines. Top with plenty of those tasty breadcrumbs!!
